I have heard that you can use graphs to test your mix in mono. Can someone please share a screenshot of the necessary graph to enable this?

This is a graph that provides stereo to mono folddown. Option-click to bypass back to stereo.

isn't it better to put the volume control before the summer to prevent possible clipping? Or is that not possible inside the summer.

It doesn't matter. It is not possible to clip in the summer. As long as the signal level is below 0dB before the signal is sent to the converters, it will not clip.
