Could you explain how the adaptor works? Does one connect the $50 Apple Thunderbolt cable to the Mac, and on the other end your adapter - which then has a FireWire cable to the ULN-8? Any pictures? Any advantages to this aside from freeing up the FireWire bus on the computer for HDD etc.?

You should go look at the Apple Store page for the adapter (it has a picture):

The adaptor is a male Thunderbolt connector on one end and a female FW800 connector on the other end. You plug a FW800 cable into the adapter and plug the adapter into the computer.

The advantages are (1) what you mention in your post -- it gives you an additional FW port and (2) if you have a machine with no FireWire, it will allow you to use FW devices...
